GLUTEN WASHER
Humid Gluten is an elastic substance arised from wheat compounds of Gliadin and Glutenin proteins that is swelled by absorbing water. Gluten is the most important quality criteria for breadstuffs. In average, amount of humid gluten in breadstuffs are between 26-32.
Principle of Gluten Test: Tempered dough is washed with diluted salt solution. Starch of flour, dissolved Albumin and Globulin dissolved in salt solution are washed out and remaining Gluten is detected.
